A specialty coffee and all day brunch room being built at the front of Gatsby Hotel, so one address earns from the first flat white to the last drink of the night.
Early Cafe opens the trading day on the Gatsby site. Single origin espresso, cold brew and a short, well made brunch menu are served from early morning, with a shaded terrace that reads as a place to sit for an hour rather than a queue for takeaway.
The model is deliberately simple. Coffee and brunch carry high gross margin and fast table turns, and the cafe shares one kitchen, one delivery run and one team roster with the venues around it, so the cost of serving each cover falls as the cluster fills out.
For guests it means breakfast is downstairs. For partners in the La Playa Group it means the same square metres are working from sunrise, instead of sitting idle until the bar opens.

Hotel rooms upstairs and the hostel across the road fill the first covers of the day before a single passer by walks in.
One kitchen, four venues
Shared prep, purchasing and rostering with the bar and hotel keep cost per cover down and quality consistent across the corner.

Early Cafe is being built into the front section of Gatsby Hotel, alongside the new La Playa Bar, so the same frontage trades from morning coffee through to sunset service. The opening date is yet to be announced, and gallery images will be published as the build completes.
Menu, pricing and trading figures shown across La Playa Group reporting will be published in the ops centre from the first week of service.
